What you’ll need

The main ingredient in this sorbet is water. You’ll also need:

  • Sugar: Use caster sugar as its fine particles quickly dissolve.
  • Lemon juice: If you don’t have fresh lemons, use bottled.
  • Cherries: Remove the pits and stalks.

Optional: If you want vibrant red sorbet, add a few drops of red food colouring.

How to make cherry sorbet

  1. Add one cup of water and sugar to a medium saucepan. Heat on medium until sugar has dissolved (simple syrup). Remove from heat and cool.
  2. Blitz the cherries and remaining water in a food processor until a fine puree forms.
  3. Add the simple syrup to the cherries and process for a few seconds until combined.
  4. Place cherry mixture into a container and refrigerate for at least 2 hours until well chilled.
  5. Churn sorbet as per manufacturer’s instructions.
  6. Scoop sorbet into a container and freezer until hardened (at least 2 hours).

How to make cherry sorbet without an ice cream maker

You can still make this dessert if you don’t have an ice cream machine. Add the liquid sorbet mixture straight to the freezer instead of churning.

After half an hour, remove and whisk until smooth, then continue freezing. If you have time, remove the sorbet 2-3 more times every half hour and whisk. This will make a less icy-textured sorbet.

What to serve with cherry sorbet

Chocolate shavings or sauce: For a classic cherry-chocolate combo, sprinkle chocolate shavings over the sorbet or drizzle with a rich chocolate sauce.

Fresh fruit garnish: Add fresh fruit slices like kiwifruit, strawberries, or peaches.

Whipped cream: A dollop of whipped cream on top contrasts the sorbet’s texture.

Mint leaves: Fresh mint leaves add a pop of colour and freshness that complements the cherry flavour.

Almond biscotti: Serve with Italian cookies for crunchy texture and a nutty flavour that pairs well with cherry.
